Pumpkin Pie Protein Truffles
Adapted From: Feeding Ger
1 Cup Protein Powder (I used Vanilla)
1 (heaping) Cup Shredded Coconut
1/2 Cup Pumpkin
1/2 Cup Coconut Oil
2 TBSP Nut Butter (I used Peanut Butter)
2 TBSP Honey
2 TBSP Coconut Milk (I used coconut/almond blend)
1 TBSP Pumpkin Pie Spice
In a large bowl, mix all ingredients together until well blended. (I put everything in my KitchenAid mixer and blended for ~15 seconds)
Line a baking sheet with parchment paper (or tin foil) and scoop using a cookie scoop.
Place in freezer for at least one hour and enjoy cold.
