I'm just going to put it out there...I love buffalo chicken dip. Like I have kind of unhealthy cravings for it and could easily eat an entire pot of it if placed in front of me. Something about ranch, texas pete, and cheese is just irresistible. I know some people HATE this but I eat mine ranch style, not blue cheese. Just personal preference.
These buffalo chicken bites are made with skinny buffalo chicken dip. I just adapted my normal dip recipe and it worked perfectly. They still have all the flavor of the dip but are easy to eat and substantial enough to be an appetizer or a main dish.
Buffalo Chicken Mini Bites
4 oz FF Cream Cheese (softened)
2 oz FF Ranch Dressing
2 oz Hot Sauce (Texas Pete)
1 can Chunk Chicken, canned
1/3 cup light Cheddar Cheese
16 Wonton Wrappers
Pre-heat oven to 325 and lightly spray mini muffin tins with cooking spray.
Break up chicken chunks with a fork.
In a bowl mix chicken, ranch, cream cheese, and hot sauce together until well mixed.
Press a wonton wrapper into each cup on the mini muffin tin.
Fill each with a spoonful of buffalo chicken mixture.
Top each with a sprinkle of cheddar cheese.
Bake at 325 for 12-15 minutes.
